Penne all'Arrabbiata (Tomato & Chilli Sauce)

Ingredients
40g/ 3tbsp butter
150g pancetta or rindless smoked bacon, diced
25g mushrooms, chopped
1-2 chillies, crumbled
2 garlic cloves, crushed
400g tomato polpa
basil leaves, shredded, plus some extra to garnish
400g penne
Grated parmesan cheese

Method
1. Melt the butter, in a medium saucepan. Add the pancetta or bacon and stir-fry until golden.
2. Add the garlic, mushrooms and chilli; cook and stir for a few minutes.
3. Add the tomato polpa, and basil; then season with salt. Cook gently, stirring occasionally for 10-15 minutes.
4. Meanwhile, cook the pasta according to the instructions on the packet.
5. Taste the sauce for seasoning. If you prefer a hotter flavour, just add more chillies.
6. Drain the pasta and tip it into a warmed bowl. Pour the tomato sauce over the pasta, toss well and serve immediately.
7. Sprinkle a few basil leaves on top as well as some grated cheese.
